Pineapple Ginger Punch
Ingredients
- 750 ml Ginger Beer
- 15 each Mint
- 750 ml Ginger Beer
- 15 each Mint
- 90 ml Lime Juice
- 90 ml Lime Juice
- 750 ml Pineapple Juice
- 750 ml Pineapple Juice

Directions
- In a blender, combine pineapple juice, lime juice, mint leaves, and a couple handfuls of crushed ice
- Pulse 2 - 4 times, just until chilled and mint is flecked through
- Pour into glasses or punch glasses filled with more ice
- Add ginger beer to each glass
- Stir gently
- Add mint sprigs and optional star anise or lime wheels
