History
The John Collins cocktail dates back to 1869 and is believed to have originated at Limmer’s Old House, a popular London hotel and coffee house in Mayfair. The drink was named after John Collins, a headwaiter at the establishment, and was originally a gin-based punch featuring lemon juice, sugar, and soda water. Over time, the recipe evolved, and by the 1870s, bartenders began using Old Tom Gin, leading to the creation of the Tom Collins cocktail. Today, the John Collins is made with bourbon, distinguishing it from its more famous cousin.
