  1. Chill the glass

History

Milk & Honey, founded by Sasha Petraske, was one of the most influential bars in the modern craft cocktail revival. T.J. Siegal created the Gold Rush as a spin on the Whiskey Sour, using honey syrup (a 1:1 mix of honey and water) instead of simple syrup, which gives the drink a smoother, richer sweetness. It quickly became a signature cocktail at Milk & Honey and spread throughout the craft cocktail scene. Despite its recent invention, the Gold Rush has earned a spot on menus worldwide and is often mistaken for a vintage classic. It helped usher in a new wave of craft cocktails that emphasized quality ingredients and simplicity, and it inspired other modern hits like the Penicillin (also from Milk & Honey).
